Our Cheeses

For those of you who have visited our dairy in lovely rural Herefordshire you will be very familiar with the cheeses we make here- since they are always available for tasting. However, the potential of the milk to produce different flavours will vary very much with the seasons and therefore the cheeses are never exactly the same, but, that is the beauty of artisan, low intensity, food production and we embrace the seasonality and variety. It is nice to know that the seasons, the cows and the hand of the cheesemaker all have their part to play.

Full flavoured hard cheese matured for 4 months.The flavour is half way between a Caerphilly and a Cheddar so nice and full and rounded- and the cheese we serve with our ploughmans lunch.

The original 1917 recipe found by a staff member in their grandmothers attic was resurrected by us in 1996. A simple smallholder cheese it was intended to be made with excess milk produced on the farm. We make it in larger quantities now.

Made with the Little Hereford curd and flavoured with fresh sage it is then pressed for 24 hours and then matured for between 6-10 weeks. Sage is a very traditional addition to cheese and produces a nice fresh flavour without over powering the cheese itself.

Made in the commonly used colander so popular with many a cheesemaker. The curds are drained and turned and the resulting form is brine bathed overnight and then matured for between 4-8 weeks to produce a hard cheese with a light, crumbly texture and creamy, yet acidic (yes this is good) flavour. And such fun to watch being made, and, if you came on a Cheese Experience Day, you could make one yourself.

The garlic Monkland is a drained curd cheese like the plain Monkland. We experimented with flavours for many years and of all the variations we played with this was the most popular. Not necessarily for the purists. Unashamedly garlicky and at its best a lovely crumbly texture and nice acidic bite.

The Little Hereford is matured for four months as usual before being delivered to the Black Mountain smokery in Crickhowell for 24 hours over oak chips. Full flavoured cheese with careful smoking so that the cheese flavour in enhanced not obliterated. Always very popular with our customers at the dairy.

These are soft,creamy,blues made individually at approx 250g. They are pierced twice and turned as they mature for up to 28 days before wrapping.They then continue to mature and soften as they age becoming softer and creamier with time.

The Other Monk ended up with this name because it was the other one we were developing at the same time as the Blue Monk and the name just stuck. Made to a camembert style it is a rich, creamy, soft cheese with a white bloom.As the cheese matures it will ripen and soften gradually becoming softer and richer flavoured with time. I have to admit that I like it at all its different stages from just softening at the edges to gooey all the way through.

A selection of products from our shop starting with our Blue Monk and a local goats cheese. There will be a limited number of these close to the Christmas period because demand is so great and only so many can be produced. A litle taste of the local gin and biscuits fron the fine cheese company and the jars of fruit that go so well with the cheese finish it off. Not too much of anything, a nice little hamper.
