Full flavoured hard cheese matured for 4 months.The flavour is half way between a Caerphilly and a Cheddar so nice and full and rounded- and the cheese we serve with our ploughmans lunch.
The original 1917 recipe found by a staff member in their grandmothers attic was resurrected by us in 1996. A simple smallholder cheese it was intended to be made with excess milk produced on the farm. We make it in larger quantities now.
